Easy and light! Spice: Umami Mommy!™

I absolutely love a deep savory flavor and for years, I just thought of it as "mushrooms, onion, garlic cooked in butter with salt and some seasonings... Then the word "UMAMI" came into our language and it is exactly right!
Spending a few decades on developing just the right smooth, savory, lip smacking flavor, "Umami Mommy™" emerged (look for her sisters - "Umami Mommy Dark" and "Umami WOW Double Garlic Mommy™"
Many times I don't have time for big productions or elaborate prep, so I have a quick go-to that is amazing!
Umami Mommy™ Fish
Section 1: Ingredients (dinner for 2)
All you need is a rice cooker and a single pot - and about 30 minutes!
2 fillets of fish - Here I have used a frozen Tilapia
1 ounce Umami Mommy! (divided into 1/2 and 1/2 ounce)
1/2 cup of rice (long or short grain - short grain is stickier) rinsed
1 cup of water
1/2 cup corn (can be frozen)
1/2 onion (either white, yellow or red) sliced long (from pole to pole)
1/2 jalapeño, (seeded and ribs removed) diced small
3 TB butter
Section 2: The Fish and Rice
In the rice cooker (we like the one with the basket at the top to hold the fish, if you don't have one like that, just put the fish on top of the rice) .... Add the water, rice and give it a quick stir
Coat your fish (even if it is still frozen this will work) with 1/2 oz Umami Mommy™ spice, and place in the basket part of the rice cooker or on top of the rice if you don't have one
Close the lid and click "COOK" (depending on your rice cooker - usually takes about 10 to 20 minutes)
Section 3: Corn, Jalapeño and Onions accompaniment
In a skillet or pot, melt the butter and coat the bottom over medium heat
add your vegetables (remember, it doesn't matter if they are frozen)
add the remaining Umami Mommy™
Cover and cook until the vegetables are tender (usually about 10 minutes) stirring occasionally
just before it is done, add a small amount of water, enough to make a little sauce.
remove from heat and leave lid on
When the rice cooker goes to WARM it is all done!
Plate the rice on the bottom, cover with vegetables and a little pan sauce and top with fish!
The nice thing about using a rice cooker is you don't have to run the minute it is done, it can keep warm for a bit!
Use additional Umami Mommy™ as a finishing seasoning - we just leave some in a shaker!
